Blueberry Rhubarb Crumble

Blueberry Rhubarb Crumble
2 cups chopped rhubarb (unpeeled)
1 cup blueberries (frozen)
1/2 cup brown sugar
1/2 cup white sugar
2 tbsp flour

2 eggs
1 tsp lemon zest
1 tsp lemon juice
1 tsp vanilla extract

Crumble mixture
1/2 cup brown sugar
1/2 cup flour
1/2 cup oats
1/2 cup cold butter

Beat the eggs in a small bowl and mix in the lemon zest, lemon juice, and vanilla extract, set aside. In a large bowl mix together the rest of the ingredients and then add in the beaten egg mixture and stir. Pour this mixture into an 8 inch square baking pan and then cover with the following crumble mixture. Mix together the brown sugar, flour and oats. Slice in the cold butter. I like to use my hands, so I will mix it all up blending in the butter pieces until the mixture resembles crumbs. Place in a preheated 350 degree oven for about 50 minutes and then let it cool for 30 minutes before eating.
