Cabbage 'Soup' with Ground Beef and Rice

We love our Cabbage Soup but sometimes veggies just aren't enough.  So we also have a Cabbage 'Soup' with Ground Beef and Rice.  :)  This 'soup' tastes just like my Mother-in-law's Cabbage Rolls.  Awesome!
Cabbage 'Soup' with Ground Beef and Rice
2 tbsp olive oil
2 lbs of ground beef
1 large white onion, chopped
2 cloves of garlic, minced
1 can of diced tomatoes (796 ml) approx. 3 cups
1 can of tomato sauce (398 ml) approx. 2 cups
4 cups vegetable broth (I used 2 vegetable cubes dissolved in 4 cups of boiled water)
1 small head of cabbage, chopped
1 1/2 cups of white rice 

Salt, pepper, parsley, mint, and Italian seasoning (to your taste)

In a large pot, add the olive oil, ground beef, and onion.  Once the beef is browned, drain the fat, and then add the minced garlic.  After a few minutes, add the diced tomatoes, tomato sauce, vegetable broth, and cabbage.  Now add the salt, pepper, parsley, mint, and Italian seasoning. Stir it up.  Bring to boil and then add the rice.  Simmer until rice is cooked. My youngest son likes to sprinkle a little lemon juice on his. :)
