Meat Sauce

Meat Sauce
1 large onion, diced
2 tbsp olive oil
2 lbs lean ground beef
1 680 ml can (approx. 3 cups) of your favourite tomato sauce (or can be a bottle of strained tomatoes)
1 tsp salt
1/2 tsp oregano
1/4 tsp pepper
1 tsp basil

In a medium sized pot saute diced onion in the olive oil.  When softened, add the ground beef. Brown the beef and then add your sauce.  Add the salt, oregano, pepper, and basil and stir well.  Simmer on low for about an hour.  This is a great sauce that can be made in bulk and frozen to be used in a variety of recipes.  (See Pasticho II.)  I've also added diced zucchini, peppers, and mushrooms (sauteed with the diced onion). As always, have fun with it and make it your own.  :D

Peanut Butter Cookies


Peanut Butter Chip Cookies
Original Recipe by Jean Pare

1 cup butter, softened
1 cup brown sugar, packed
1 cup granulated sugar
2 eggs
1 cup smooth peanut butter

3 cups all-purpose flour
2 tsp baking soda
1/4 tsp salt

(2 cups peanut butter chips or chocolate chips or a mixture of both)

Cream butter and both sugars together.  Beat in eggs, one at a time.  Mix in peanut butter.  Stir in flour, baking soda and salt.  (Stir in peanut butter chips.) Shape into small balls.  (I use an ice cream scoop.)  Place on ungreased cookie sheets allowing room for expansion. (I use parchment paper.) Press with fork.  Dip fork in flour as needed to prevent batter stickiness.  Bake in 375 degree oven for 12 to 15 minutes.  (I bake in 350 degree convection oven for approx. 13 minutes or until golden.)

Christine It Variation:  Chocolate Peanut Butter Chip Cookies
Replace the 3 cups of all-purpose flour with 2 cups of all-purpose flour and 1 cup of cocoa. The rest is the same as original.

Christine It Variation:  PBJ Cookies
Make a batch of the original recipe with peanut butter chips added.  Cut the scooped dough in half, shape into a ball and place on cookie sheet.  Slightly press ball down with fingers.  Bake at 350 convection for approx. 10 minutes or until golden.  Let cool for a few minutes.  Place 1/2 tbsp of your choice of jam, (I like strawberry), on one cookie, cover with another, and gently squeeze.

Christine It Variation:  50/50 Peanut Butter Cookie
Make one batch of Peanut Butter Cookie Dough with Chocolate Chips and one batch of Chocolate Peanut Butter Cookie Dough with Peanut Butter Chips.  Scoop out dough from each batch onto a plate and cut in half.  Take one half from each batch and push them together on a baking sheet.  Press down slightly with a fork.  Bake at 350 convection for 13 minutes or until golden.

Easy Chicken Wings with Diana Sauce

Chicken Wings with Diana Sauce (Honey Garlic)


1 package family size wings (I get them from Costco)
1 bottle Diana Sauce (We like Rib and Chicken or Honey Garlic)

Preheat oven on broil. Put wings into large pan lined with foil. Put pan on top rack in oven and watch carefully. Once the top side is lightly browned, turn wings over. When this side has browned, take pan out of oven and drain most of the excess liquid from pan. (I pour this into a can and throw it out later when it has cooled down.) Set oven to 350 degrees. Pour half of the Diana Sauce over the wings and put pan into oven uncovered on middle rack for about 30 minutes. Turn wings over and pour the rest of the Diana Sauce on. Put back into oven for about 30 minutes. So good!

The Blind Lady Cafe's Blueberry Pie

I made The Blind Lady Cafe's blueberry pie...a yummy success!  Jodie is a wonderful lady who helped me get started on FB and has been so supportive of my page.  Please visit her Facebook page for more mouthwatering recipes. :D
As you can see I chose to do a double crust.  :)
Olde Fashioned Blueberry Pie
Recipe from The Blind Lady Cafe

3/4 cup white sugar
3 tablespoons cornstarch
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
4 cups fresh blueberries - I buy fresh then freeze them .. frozen prepacked blueberries have added sugar
1 recipe pastry for a 9 inch double crust pie - I use the recipe for Pie Crust on the Crisco Shortening box .. it's the BEST
1 tablespoon butter

Preheat oven to 425 F. Mix sugar, cornstarch, salt, and cinnamon, and sprinkle over blueberries. Line pie plate/dish with one pie crust. Pour berry mixture into the crust, and dot with butter. Cut remaining pastry into 1/2 - 3/4 " wide strips, and make lattice top. Pinch edges or press edges with a fork. Bake pie on lower shelf of oven for about 50 minutes, or until crust is golden brown.


BLC Hint/Tip
*** You may also wish to use a pie edge cover for first 30 min then remove .. the chances of the crust edges burning is rare, but keep a close eye on it and use edge cover or foil if you want.

*** You may want to place this pie on a cookie sheet .. on occasion, the filling has been known to bubble over a little.

Grilled Cheese and Egg
My oldest asked me to make him a quick, filling sandwich and to write down specific directions so he could make it himself next time and we came up with this. Whisk one egg in a bowl.  In a small frying pan, put in about 1 tsp of olive oil with the heat on medium low.  Once the oil is warmed, pour in your whisked egg and let it cook, then flip. When the egg is cooked set aside.  Butter one side of your bread slices.  Place one slice of bread, butter side down, into pan.  Place slice of cheese on top of your bread, and then place your cooked egg of top of the cheese (cutting it to fit the bread). Place another slice of cheese on top of the egg.  I try to place everything on the bread so that the whole surface of the bread is covered so I'm not left with just bread and nothing inside.  Then place the other slice of bread on top with the butter side up.  'Grill' your sandwich to your liking on medium low heat, my oldest likes his not too dark or as he calls it, medium rare. :P

Refrigerator Red Plum Jam
I made some jam!  We had so many red plums from our trees this year that I was able to experiment with a lot of ideas for new recipes.  Yay!  I put 8 cups of peeled cut up plums into a large pot.  I then added 1 cup of water, 1 tsp vanilla extract, 1/8 tsp of cinnamon, 1 1/2 cups of sugar, and the juice of 1 lemon.  I mixed all of this together bringing it to a slow boil while the sugar dissolved.  Then I let it simmer on medium/high heat while stirring constantly.  After letting it simmer for awhile, I started testing to see if the jam was ready by putting a spoonful on a saucer and placing it into the freezer for a few minutes so I could see if it reached the thickness that I liked.  I love this jam; it reminds me of sweet tarts candy!  The good thing is everyone loved it.  The bad thing is, everyone loved it.  lol They were eating it warm right from the pot, (on bread, over ice cream, by the spoonful), so I don't know how many jars it would have made.
