Classic Rhubarb Pie

Classic Rhubarb Pie
Rhubarb from our garden.

Stir it up.

Pour it in.


Dot the pie (with butter).

2 nine inch unbaked pie shells (I make mine from Tenderflake lard)
1/2 cup white sugar
1/2 cup brown sugar
3 tablespoons flour
1/2 tsp cinnamon
2 eggs, lightly beaten
4 cups chopped rhubarb, unpeeled
1 tablespoon or more of butter
White sugar to sprinkle over top crust

In a large bowl, mix together the white sugar, brown sugar, flour, and cinnamon.  Add the lightly beaten eggs and stir until smooth.  Add the rhubarb and mix gently.  Pour this mixture into pie shell and dot with butter.  Dampen crust edges, lay top crust over.  Trim and crimp to seal. Cut slits in top and sprinkle with sugar.  

Bake in a 400 degree oven for about 45 minutes or until golden brown.  (If you have a convection oven you can bake on convection for the last 5 minutes or until the top is a nice golden brown colour.)  I recommend you put the pie on a baking sheet as the filling might try to escape.  :D

Fudge

Extreme Chocolate Peppermint Fudge
Recipes adapted from Rachael Ray's Five-Minute Fudge Wreath



Easy Mint Fudge

3 cups chocolate mint chips
1 cup semi sweet chocolate chips
1 can of sweetened condensed milk (14 oz)
1 tsp vanilla

Line an 8 inch square pan with foil. Put all the ingredients into a medium saucepan. Stir the mixture over medium low heat until they melt together. (I like to leave in a few unmelted chips.) Pour the mixture into your pan and let cool. Then place the fudge in the fridge and chill until firm. I store the fudge in the fridge, it lasts quite a while, not that the kids let it sit that long.  :D

3 cups butterscotch chips
1 cup white chocolate chips

Strawberry Rhubarb Pie

Strawberry Rhubarb Pie with Vanilla Ice Cream (Kawartha Dairy)
2 nine inch unbaked pie shells (I have shells, that I made from Tenderflake lard, stored in my freezer)
2 cups diced rhubarb, unpeeled
2 cups fresh strawberries, cleaned and diced
1 1/4 cup white sugar plus 1 tsp, divided
2 tbsp flour plus 1 tsp, divided
1 tsp or more lemon zest

Sugar to sprinkle over top crust.

A look inside
In a small bowl, mix together 1 tsp each of the white sugar, and flour (to sprinkle onto the bottom pie shell). Set aside.

In a large bowl, combine the rhubarb, strawberries, white sugar, and flour. Mix well. Sprinkle the white sugar/flour mixture onto the bottom pie shell and then pour the rhubarb/strawberry mixture into the pie shell. Spread the mixture out evenly and then sprinkle the lemon zest. Dampen crust edges, lay top crust over. Trim and crimp to seal. Cut slits in top and sprinkle with sugar.

Bake in a 400 degree oven for about 40 minutes, or until golden brown. (If you have a convection oven you can bake on convection for the last 5 minutes or until the top is a nice golden brown colour.)  I recommend you put the pie on a baking sheet as the filling will tend to escape.  This pie is a little runny when eaten warm or at room temperature which is why I recommend the vanilla ice cream on the side.  The warm filling mixed with the ice cream is heavenly.  :D

Rhubarb Pie

Rhubarb Pie with Kawartha Dairy Strawberry Ice Cream
1 nine inch (deep) unbaked pie shell (I have shells, that I made from Tenderflake lard, stored in my freezer)

2 eggs
3 cups chopped rhubarb (unpeeled)
1/2 cup brown sugar plus 1 tsp, divided
1/2 cup white sugar plus 1 tsp, divided
2 tbsp flour plus 1 tsp, divided

1 tbsp butter
1 tsp lemon zest

In a small bowl, mix together 1 tsp each of the brown sugar, white sugar, and flour (to sprinkle onto the bottom pie shell). Set aside.


Beat the eggs in a large bowl.  Then add the rhubarb, brown sugar, white sugar, and flour. Mix well. Sprinkle the brown sugar/white sugar/flour mixture onto the pie shell then pour the rhubarb mixture into the pie shell.  Spread the rhubarb out evenly then place bits of the butter all over the top of the pie and sprinkle the lemon zest.  Bake in a 425 degree oven for 10 minutes then reduce the heat to 350 and bake for about 30 minutes or until golden brown.

Well the boys had gone to this poutine restaurant and were raving about a steak poutine they had and wanted to know if we could make something similar at home. My first thought was, what's wrong with my poutine? lol Then I saw this as an opportunity to get the boys into the kitchen (don't tell them) and said sure lets do this together. :P I also remembered that my foodie friend Jodie from The Blind Lady Cafe had posted a shredded pork poutine awhile ago and I had some pork roast leftovers. I started chopping the roast while my oldest started peeling the potatoes. We made some Club House Poutine Gravy and put it into a frying pan with the cut up roast and let it simmer. Then my youngest suggested we sauté some peppers and onions as well and we did this in another pan with a little olive oil. We fried the potatoes in our deep fryer in olive oil. I then made some extra gravy to pour over top of EVERYTHING. The end result is what you see in the picture. French fries topped with pork roast/gravy, then peppers and onions, and finally more gravy. We didn't have cheese curds (sorry Jodie!) so the boys had shredded mozzarella cheese on theirs and I had mine with no cheese. We had this with some Greek salad...so good.
