Chicken Breast with Olives, Feta, and Roasted Red Peppers
I wanted to try a new recipe tonight but I always have a back up in case the kids aren't crazy about it. So I made a French Onion Chicken from Closet Cooking for our new recipe and a Chicken Breast with Olives, Feta, and Roasted Red Peppers for our familiar recipe.  The French Onion Chicken was a big hit with my daughter, hubby, and myself but not so much with the boys. If you like French Onion Soup, you are going to love it, don't pay any attention to my boys. :P
French Onion Chicken over Rice
Now for our familiar recipe I don't have to worry too much about the kids liking it, they grew up on this stuff. :D  I mean, feta, olives, tomatoes?  I think there's a law that says you have to have them at every meal, when you are 'Growing up Greek'. :P  Needless to say we love this recipe and I hope you will too.  As always, have fun and make it your own. :D

Chicken Breast with Olives, Feta, and Roasted Red Peppers

5 skinless boneless Chicken Breasts, flattened
Olive oil
Salt and Pepper
2 cloves of Garlic, minced
2 cups of Onions, sliced
20 pitted Black Olives, sliced
2 Tomatoes, sliced
2 Roasted Red Peppers, sliced
1 tbsp dried Parsley
1 tsp Oregano
2 teaspoons Lemon Juice
1/2 cup crumbled Feta

Over medium high heat, in a large pan, fry the flattened salted and peppered chicken in a little olive oil. Cook until done. (Tip:  I wanted the chicken halved so I cut the chicken breast after pan frying so that I could make sure they were cooked.) Set aside and keep warm.  Add more olive oil to the pan, add in the garlic and onion and saute for a few minutes.  Then add in the olives, tomato, roasted red peppers, parsley, and oregano. Cook for about 5 minutes. Stir in the lemon juice.
Getting ready to add back the chicken.
Add the cooked chicken back to the pan, spoon the olive/tomato/pepper mixture over top and then sprinkle with the feta. We serve this over rice with a nice Greek salad on the side. :D

The chicken breast recipe with the olives, feta, and roasted red peppers is really tasty and if you have leftovers, (which is rare here but it can happen), you can make a really nice pizza.  YUM!
