Broiled Pork Souvlaki

Pork Souvlaki
2 lb boneless pork loin
1 cup olive oil
1/2 cup lemon juice
4 cloves garlic, minced
1/2 tbsp oregano
1 tbsp salt
1/2 tbsp pepper

Trim the pork and then cut into cubes, mine were about 1 inch in size.  In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.  Add the pork and stir.  Marinate for at least 30 minutes.  Place your pork cubes onto skewers and place on a foil lined baking sheet. Pour remaining marinade over top. Set your oven to broil setting at 525 degrees and place the baking sheet 6 inches from the top. Broil for 9 minutes and then turn the souvlaki over and broil for another 7 minutes.  Cook time will depend upon the size of your cubes so check to make sure the souvlaki is cooked to your liking before removing from oven. I usually serve this with Greek Salad, Rice, and Tzatziki. :D

This recipe came about from trying out two new recipes from a couple of fabulous bloggers.  The Baked Cajun Chicken Breasts from Gal on a Mission and the One-Pot Paprika Chicken Thighs from Reluctant Entertainer.  My oldest loved the flavours of the paprika chicken thighs and I loved the way the chicken breast was so moist, quick, and easy to make from the baked chicken breast recipe. This is now a family favourite and when there are leftovers, we will have them in wraps and sandwiches or in a quick stir fry. The way the chicken breast is baked is the star of this recipe, and there are so many yummy spice combinations out there, so have fun and make it your own.  :D

For every three large chicken breast:

1 tsp salt
1 tsp pepper
1 tbsp Montreal chicken spice
1 tbsp paprika

Preheat oven to 450 degrees.  Place the spices in a freezer bag and shake to mix.  Add the three chicken breast and shake the bag to coat.  Lightly oil your baking pan, I use olive oil, and place the chicken in the pan.  Bake for 18 - 20 minutes uncovered, remove from oven and cover with foil; let sit (out of the oven) for another 5 - 10 minutes.  Time will vary depending upon size of chicken breast.

Paprika Chicken Thighs

For every six boneless skinless chicken thighs:

1 tsp salt
1 tsp pepper
1 tbsp Montreal chicken spice
1 tbsp paprika

Preheat oven to 400 degrees.  Place the spices in a freezer bag and shake to mix.  Add the six chicken thighs and shake the bag to coat.  Lightly oil your baking pan, I use olive oil, and place the chicken in the pan.  Bake for 30 minutes uncovered, remove from oven and cover with foil; let sit (out of the oven) for another 5 - 10 minutes.

Ready for some slow cooking.
Since the bone in thighs are a bit bigger than the boneless ones, I used the above spice mixture for every four thighs. I drizzled a little olive oil in the bottom of the crock pot and then a little more on top of the thighs.  Cooked on high for 6 hours.  Did I mention I love my crock pot?  :P

Chocolate Chocolate Chip Muffins

Chocolate Chocolate Chip Muffins
2 cups all purpose flour
1/2 cup cocoa powder
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 cup brown sugar
2/3 cup white sugar
1/4 tsp salt
2 eggs, beaten
1 cup buttermilk ( 1 tbsp vinegar in measuring cup and then add milk to make 1 cup)
1/4 lb butter, melted
1 tsp vanilla extract
1 1/2 cups of milk chocolate chips

Yummy Batter
Mix dry ingredients together in a large bowl. In another bowl, whisk eggs, buttermilk, butter, and vanilla. Make a well in dry ingredients and pour in liquid ingredients. Do not over mix. Fold in chocolate chips. Spoon batter into lined muffin cups, and bake at 350 degrees for 20 minutes or until done. This recipe makes 12 jumbo muffins.

Ready for the oven.

Crock Pot Pulled Pork


Just out of the crock pot, then decided to put it under the broiler for a minute.
This Crock Pot Pulled Pork recipe is from LowCarbCroc.Com.  Another 'must try' from the list. Really good!  I 'Christine'd' It a little by using only 1 tbsp of chili powder, added 1 tbsp of Montreal Chicken Spice, 1/2 tsp of garlic powder, and used Chicken and Rib Diana Sauce for my favourite BBQ sauce. Of course I had to make my Coleslaw to go with it. :D

Pork with Paprika, Mushrooms, and Sour Cream


Pork with Paprika and Mushrooms over Rice
This Pork with Paprika, Mushrooms, and Sour Cream recipe is from Kalyns Kitchen.  I've had it in my 'must try' pile for awhile.  It was really good!  I 'Christine'd' It a little by substituting 1 tbsp of Montreal Chicken Spice for the second tbsp of paprika, I also added in 1 tsp of chili powder, (for seasoning the pork), and left out the thyme, caraway seeds, and sour cream. It's a keeper.  :D
