Broiled Pork Souvlaki

Pork Souvlaki
2 lb boneless pork loin
1 cup olive oil
1/2 cup lemon juice
4 cloves garlic, minced
1/2 tbsp oregano
1 tbsp salt
1/2 tbsp pepper

Trim the pork and then cut into cubes, mine were about 1 inch in size.  In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.  Add the pork and stir.  Marinate for at least 30 minutes.  Place your pork cubes onto skewers and place on a foil lined baking sheet. Pour remaining marinade over top. Set your oven to broil setting at 525 degrees and place the baking sheet 6 inches from the top. Broil for 9 minutes and then turn the souvlaki over and broil for another 7 minutes.  Cook time will depend upon the size of your cubes so check to make sure the souvlaki is cooked to your liking before removing from oven. I usually serve this with Greek Salad, Rice, and Tzatziki. :D
